Bean Stew (Faux Beef Stew)
- Kidney Beans (large Can)
- 1 Med Onion
- 1 Clove Garlic
- Carrots-several cut up in 1″ pieces
- Celery-several cut up in 1″ pieces
- Potatoes (8 med – quartered)
- Chilli Pepper use to taste
- 1/4 cup Nutritional Yeast Flakes(find in health food stores)
- Salt/Pepper to taste
- Water
This recipe can also be made with dried beans. Follow package directions to cook beans and then begin recipe as follows.
Dice both garlic and onion and saute until clear in medium stock pot. Add water to 1/4 of pot. Add 3/4 of can beans or all of cooked dried beans. Add cut carrots and celery, nutritional yeast and 1 or 2 tablespoons of chilli powder. Cover and cook at medium heat aprox 1/2 hour. Add potatoes, and remaining canned beans, bring to boil again. Adjust to taste any additional nutritional yeast, chilli pepper, salt and pepper. Cook until vegetables are soft. Be sure not to overcook.
Serve with homemade bread for a special treat.

Lentil Soup (Crock Pot)
- • 1 pound dried lentils, sorted and rinsed
- 2 medium carrots, cut into 1/2″ pieces
- 1 medium potato, peeled and cut into 1/2″ pieces
- 1 medium onion, chopped
- 2 medium stalk celery, cut into 1/2″ pieces
- 6 cups water (use base/broth if desired and/or 1/4c nutritional yeast
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Place all ingredients in crock pot. Cover and cook on low heat setting about 8-9 hours or 3-5 on high..or until lentils are tender. Stir well before serving. 8 servings.
